Interview prep should start from the moment you apply to a job. You never know how fast an employer will call with an offer to interview. You'll already be stresssed enough going into the interview, don't let a lack of preparation make it worse!
When you're stressed, anxious or nervous your endorphins kick in and you're cognitive function is not at 100%. When this happens in an interview it can cause you to "blank" on questions you know the answer to! However, if you practice out loud beforehand these answers will begin to become muscle memory and you'll be more likely to remember them even when you're nervous! It's also a good idea to pracitce in front of a mirror, with a friend, or while recording yourself. This will help you determine any quirks you might have. Think not smiling, speaking with your hands or using filler words.
Interviews can range from 20 minutes to a full 8-hour day, or even several days. Know what to expect so that you can be fully prepared, mentally and physically.
